Wine
Willow Bridge Estate Bookends Fumé Sauvignon Blanc Semillon is drawn from the winery's hillside vineyard in the Ferguson Valley, Geographe. The Sauvignon Blanc and Semillon blocks stand at each end of the site, like bookends.
The fruit is harvested cold, crushed and pressed, then the juice is allowed to settle naturally. Fermentation occurs in barrels, including one third new French oak, which enhances the aroma and texture of the final wine.
Maturation takes place in barrel on lees for two months prior to an early bottling. The final blend is typically 55% Sauvignon Blanc and 45% Semillon.
Pale straw green, Willow Bridge Estate Bookends Fumé Sauvignon Blanc Semillon has citrus and tropical fruit nuances, cleansing texture and a tangy finish. Cellaring potential is four years.
